Minecraft is a poor imitation of the rugged tactility of LEGO bricks.
So, I've officially revolutionized the pre-hammer process via minecraft. I'm actually surprised nobody's done this before.
Here is what I've been doing:

Pros:
Much more confident going in than in hammer, where you place the base and back out
Can find issues with sightlines and such before putting anything in hammer
3 Dimensions for making height variation easier rather than 2-D sketches
Cons:
Very time consuming
Walls are crazy thick
You're definitely not the first to do that. I tried that once between a year and two ago and it is honestly kind of terrible. Firstly, only being able to use cubes does not help you for getting an idea with scale, secondly any sightlines you catch are going to be ones you should automatically think "that's not right" to anyway and thirdly as you say it takes forever.
Nothing will beat plain old brushing out simple first.
