Can anyone offer any help with this? I either have to limit the defenders acess to the point hugely, or leave the defenders spawning right next to the attackers main route for all three of the rounds. Neither of those are hugely attractive

Because it's perfectly fine to have an open map. Not everything needs to be corridors and obscuring props.

That said, there's going to be a defensive building for RED on the left side and maybe some more rooms to sneak into.

Yes, indeed. And once again, if you can write programs/code, and you'd be interested in improving or writing from scratch a richer, more beautiful and more functional Half Life Model Viewer, that can do things like load pre-made cubemaps, has a better interface, and other great things (see the Marmoset Toolbag for examples), I will generously donate to your cause. But don't consider that the reason for doing so, just a bonus. Your real inspiration should be the betterment of mankind.
