whats the easiest / cleanest way to prevent signs from being sprayed on?
Put any brush entity set to "don't render" over/covering it? Should work, but I haven't actually tested it.
Have a thin func_brush set to "Never Solid" right in front of the wall. Then make the one face your sign and nodraw the rest. Players can still spray on the wall but your sign will always be in front of it
