I run a couple of servers for ES Clan, and I don't run any of the valve maps (unless someone votes it in... blek!).
My favorites are smaller maps like ctf_mach4 and the upcoming ctf_arch (rocks!).

calculatedChaos has two servers, one general custom and one for the more goof around custom maps. calculatedChaos is a group of players that get along well and know how to have a good time. We aren't a competitive clan and are very interested in trying out new maps.

I'm not the owner, but have been a long time server OP there, and generally consider it to be my home playing field for TF2. Our server has been around as long as TF2 itself (even in beta):

Currently we're running the entire CTF contest rotation, along with ctf_haarp, plr_nightfall, and plr_panic. Just added arena_coalmine to the list.

Join our Steam Community Group for updates on new maps and notifications for when we're trying to fill it up.

EDIT: Forgot to mention, it's 18 slots.
