Me and a friend tested the payloads on the payload race - both pushing the carts at the same speed, from stage one - so the carts reached the centre at the same time. Outrageously, his blu cart was given priority to cross the track in the middle where they meet before mine! My ping was slightly worse (but not considerably ) so this may have caused it.. but I wanted to see what happened when both carts reached the middle at the same time.

I actually wondered what happened if the cars hit the middle crossover at the same time. Interesting to know.

If they come to the same fork and try to merge, the simply explode together and the round ends in a stalemate.

Look at the entity setup...

The cart that reaches the center first is pushed through on its own, the other cart is stopped. After it reaches the other end, both carts are pushed normally.
