What game mode should I select?
a question like this makes me assume you're new to mapping, therefore do koth

I'm just going to select Payload, seems nobody is staying with the topic.
You should really consider doing a koth first. It doesn't matter who you are, everybody here have had their "first project", and 95% of the time, that first project is bad. That includes me.
... So why not let the first project me something simple and straightforward at least?
I suggest a TC map. You will be the one who makes it fun, I can feel it.

Yes, give him the game mode even experienced mappers have to spend a hideous amount of time to get working.

We're supposed to be helping him, not flattening his tires. There's only one official TC, and it's horrifyingly huge and complex.
I would suggest you try a KOTH. If you really don't want to make a KOTH, try one stage of a A/D or do a really simple, linear 5CP. If you do a payload, try a single-stage A/D payload.
It's always good to tackle a manageable project so you can learn the ropes and the concepts. Then, be ambitious.
I'm doing one stage, with like 5 capture points.
do a territorial control where rounds consist of 5 cps instead of 2, the cp layout changes dynamically throughout the round and there are exactly 23 different possible rounds. final rounds must be 3 cp attack defend with each point 1536 units higher than the previous. you have 2 days to finish the map, one more day to port it to cs:go and one more day to go official in both tf2 and cs:go. should you fail on your first try, immediately start over until you succeed. good luck.

I think we should petition Valve to give their level designers Dooms challenge. If they managed to complete it they would get a months paid vacation, Valve time.

Medieval mode sounds.... too unrealistic for a Payload type.
