Is there a particular case study of a map which just does everything right gameplay wise?
As in Ammo, health, class balance, mixture of flanks, high ground etc

pfft. That's a very complex variable dependent answer. What works for one map might not the other and vice versa, if I have to say a good tip of advice. look at what other maps do and try to apply that to you're own. Things like the Viaduct Formula, Height Variation, Balance things of that nature. If you go around the forums you could probably find a few good guides of far more experienced mappers talking about their process and how they tend to roll. Though there doesn't tend to be concrete rules when it comes to mapping. Expect super apparent things.

You have to play test your maps. As you create and test by yourself, you will become blind to unpleasant aspects of the map. Test, test, test, and ask for feedback. What kinda feelings does different parts of map bring. Listen to where are the problems of the map. But don't directly follow their advice, rather find solution to problem by yourself. People are good at pointing where problems are, but they are bad at creating solutions.
