I was wondering if there is a trick to making uneven ground like sand or rocky walls or anything of that nature. Or is it simply a case of drawing flat ground and tweaking it until you are happy with it?

Use the create noise feature to make small differences in the displacements.

Don't do this. It doesn't look natural in ANY way. There are no shortcuts to good looking displacements. Tweak 'em and keep tweaking.

Noise is fine usually, though I find that slightly smoothing the whole thing with a large brush will improve it a lot.
