Really how do you make it?

The waterfall is a prop_static model.
It looks many better than someone you can build with brushes.
    Also the animation.

How do you make those models?
And is it possible to make something like that on my own as an casual mapper?

Lucky for you ABS is doing just that. However, it my take some time for him to do it. Nevertheless, if you were to do this it would be vary hard unless you are good at making models for other editors. So don't worry you will get your waterfall soon, how soon I can't say but it will be soon.

I think he wants to create his own waterfall model, not put the existing one in a map.

3DS max, blender, Modo(what valve use) maya... the names of just a few modeling programs. These are what you need to look into to find out about making new cliffs.

I was gonna do that too. Just edit the vmt so it lights like terrain brushes, not models and put it on a displacement waterfall. Great for custom size waterfalls.

However the model pretty much fit right into my map exactly like I wanted so why bother?:p

I was hypothesizing what I would do were I to use a waterfall, nowhere in the sentence were words saying I was actually doing it :p

Seems like you could just use a series of displacements with the animating texture used by the waterfall model. You'll probably have tweak the .vmt, changing it to LigtmappedGeneric, rather than VertexLitGeneric.
