Me? About... 3-4. All of which was because they crashed.
about 10 "projects"
about 3 for me in tf2.. if you call maps.
Mostly i spend hours and hours making a small area detailing it then throwing it out as i can never grasp level design.
I have at least 2, which I quite because they sucked. I've probably had upwards of 10 other "projects" that I've started one day and ditched the next day, though.

I just cancelled both of my contest entries, also the 5 cp map

Well actually not, but around 15, almost all of them were Goldsource (HL1,CS 1.6 engine)
Over 100, though most were just experiments.
ditto, except more like 200.
Conceptually, I don't really consider "experiments" as maps. It's only a map if it's a fully fleshed out idea that I intend for others to play.
So on the FPS front, of projects that I can actually remember, I've left three unfinished. One was a map for Reaction Quake 3, one was a Portal map, and one is arena_beacon, which I can't complete due to utter disinterest in the arena game mode.
Don't ask me about non-map related projects. My record there is... less impressive. :\
[Personal opinion] Anyone who can say less than 10 shouldn't be pulishing any map anytime soon, because it will amost certainly suck - unfortunate truth. (Unless they have experience in another engine that is)[/personal opinion]

but seriously, if you include experiment maps, that's not that far fetched with how long I've been mapping and how many things I've had lying around.
If i include experiments it probably ~150
Only one that I would actually consider a map, but I really didn't like it so I left it to rot

For TF2, about 3. I haven't really started many "serious" TF2 mapping projects yet, so lots of stuff I've done are just experiments.
I have yet to have one TF2 project I stopped working on. (Grid, Observatory, Waste, Grinder - All completed or in development).
I've had grid up for several months until Observatory's release.
I didn't make any 'experiment' maps because I learned how to use Hammer as I went through Observatory's development
The only other 3D engine I've had experience with is Build for Duke Nukem 3D.
i've got 2 unfinished maps (their portalfiles scares me), and about 50 "experiments".
