I want to create a brush colored neutral (grey), which changes its color to either blue or red depending who caps the point. How do I do this? I tried to give a func_brush a name and add an output from the trigger_capturearea "OnCap blablabla" but didnt work.... HEEEEELP (accentuated by dramatic music)

can't honest see the use of this (the change would be too obvious and would look odd) but hey...

have 3 func_brushes, one textured grey, one blue, and one red. Disable the red and blue one then trigger them to be enabled when each team caps respectively (OnCapTeamRed/Blu as you know) while disabling the grey one at the same time.

    I think you mean OnCapTeam1 and OnCapTeam2.

You're either gunna need three brushes or a model with three skins like the control point model. I'm pretty sure the overlays in portal that change colour don't work in TF2 but I've never tried them out so you might want to look up the indicator overlays from portal.
