Is it possible to have a prop_dynamic model such as engineer.mdl in a TF2 map that has no hat?
I believe the "hatless" just removes the hat part of the model ingame, so no, unless someone were to make one.
It's hide_player_bodygroup_name = "hat" in the items file but I guess you can't do that to props.
edit: Wait, prop_dynamic has a SetBodyGroup input...

There's always the head gib of the engineer in the models selection.
Nah, I figured it out. You just send the prop_dynamic an invalid SetBodyGroup index and all the bodygroups (hats!) disappear.
Separate names with a comma.
