What material should I place behind displacements so that they don't leak into the void? Does nodraw seal the map? What are some materials that do or don't seal the map?
Use Nodraw! Nodraw seals when it's world geometry, and also if a little bit of it comes through a displacement its not visible, so it's a great choice for sealing the map behind displacements.
Afaik the texture doesn't matter unless it is a special tool texture like skip or hint. Nodraw is the best choice because as it says it does not render anything unnecessary. Generally everything you cannot see should be nodraw eventually in the maps lifecycle.

It doesn't matter for the sky. Also every brush face that is facing "the void" (outside the skybox) gets automatically nodrawn as well as faces that are fully against another face.
