I want to know how to convert .vmf files to .bsp

I don't know how to convert .vmf files to .bsp files, is there a way to do that in hammer or not in hammer?

I have tried it already but it just opens the older version of the map, can I do it somehow to make a new bsp or update the current bsp of it?

I think that means there is a leak in your newest version. Go to tf2 maps folder and delte the map, then try to compile again, when its done go to Map> Load Pointfile, a red line should show you where is the leak, fix it and that should solve the problem.
