Replacing stock models

Can it be done? So far, I've had only partial success in doing so. I'm using custom item pickups in my map, and in order to prevent the health packs from being overridden by the Halloween style ones, I tried copypasting them into the props_halloween folder and saving them with the same filenames as the stock models. They showed up where I expected them to be in Hammer, but in game, everything was normal. I thought maybe packing them was the key, so I tried that. No dice.

Surely this is a thing you can do somehow. What am I missing?

Update: I occurred to me why you normally wouldn't want this: If your custom model has a different collision mesh than the default, it could cause weird glitching. Still, a packed model wouldn't have that problem and that's not working either. Any ideas for how I might be able to work around this?

Health and ammo packs have an extra property to set a custom model, which should ignore any of the holiday overrides.

Don't use the normal model properties on those as it doesn't work.

Edit: I don't know what its property name is in Hammer, but its KeyValues key is "powerup_model"

Not sure what you think you mean, but the Model attribute that has a dropdown in Smart Edit is the same as powerup_model. And no, it doesn't stay when you turn on Halloween mode.
