I thought I might have a crack at this new contest to help me learn how to detail and how to optimise a fully made map but I dont want to start adding props/texures to my map that i've downloaded from here say and am not sure if there official or not and add without contacting the creator.

So is there an easy way to delete this kind of stuff or does hammer tag custom stuff? Or is it just a case of having to reinstall the SDK?

Thanks even if you've read this but have no clue yourself

You could delete everything from your:
X:\Program Files\Steam\steamapps\*user name*\team fortress 2\tf\materials
X:\Program Files\Steam\steamapps\*user name*\team fortress 2\tf\models

Be sure to save them somewhere else if you will need them later.

I don't know if there is an easier way...

You can rename the folders to 'materials1' and 'models1' and new ones will be automatically made. Then, when you want to get the old ones back, delete the 'models' and 'materials' folders and re-rename the 'models/materials1' folders.

Protip: use this method to check correct Pakking.

Can't you just stick with models and textures you are sure are made by Valve?
